Hot Honey Hunter’s Chicken with Wholegrain Mustard Mash

Ingredients:
Hunter’s Chicken:

2 chicken breasts

Drizzle of vegetable or olive oil

12-14 strips pancetta (depending on thickness)

4 tbsp Hawkshead BBQ Sauce

2 tsp Wilderbee Hot Honey

Salt & pepper, to taste

Oryx Smoked and Chilli Salt, to taste

100-150g Thomas Hoe Red Leicester (from the deli)
Mash:

3 large potatoes (any variety)

Splash of double cream or milk

1 tsp Tracklements Wholegrain Mustard

Salt & pepper, to taste

Small knob of butter
Method:

Roughly chop the potatoes and place them in a pan of cold water to cover. Add a pinch of salt, cover with a lid, and bring to the boil. Cook until knife-tender, around 20 minutes.

While the potatoes are cooking, pat the chicken breasts dry, trimming off any tenders if necessary. Drizzle with oil and season with salt, pepper, and Oryx Smoked and Chilli Salt.

Wrap each chicken breast in pancetta, ensuring they are fully covered. Place on a baking tray and roast in a preheated oven at 200°C for 20 minutes.

In a small bowl, mix together the Hawkshead BBQ Sauce and Wilderbee Hot Honey.

Remove the chicken from the oven and brush generously with the BBQ and honey mixture. Sprinkle over the grated Red Leicester-style cheese and return to the oven for a further 7-10 minutes until the cheese is melted and bubbling.

Drain the potatoes and mash in a bowl, adding the cream or milk, Tracklements Wholegrain Mustard, salt, pepper, and butter. Mash until smooth and creamy, adjusting seasoning to taste.

Drizzle the finished chicken with extra hot honey and serve alongside the wholegrain mustard mash and your choice of seasonal vegetables.
