Sage is rubbed into the curds before pressing into moulds and maturing for around 9 months. It's sweet and strong and for traditionalists everywhere. Based on an old fashioned recipe. The layers of sage and the extra sprinkling on top give this unique cheese a distinctive and recognisable look. The cheese is now made in Earlswood‚ Warwickshire.
