A favourite of our cheese buyer! Sauvaget is coated in ash , and has plenty of earthy, grassy, salty and lactic flavours. Its texture can be dense & crumbly when fresh, but as it ripens it becomes gooey and scoopable.
Made with unpasteurised goat's milk & animal rennet.
