Finocchiona's origins come from fennel seeds, which are abundant across Tuscany, being substituted for the much more expensive peppercorns in the Middle Ages. Fennel is the perfect seasoning to bring out the 'porkiness' of the minced up meat & fat, and is a firm favourite amongst our staff because of this.
