-
50g Parmesan cheese, grated

50g Comté cheese, grated

Truffle Infusion:
-
2 tablespoons Truffle Hunter Black Truffle Oil

Topping:

50g breadcrumbs
-
25g Parmesan cheese, grated
-
1 tablespoon Truffle Hunter Black Truffle Oil
Instructions
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package instructions. Drain and set aside.
2. Prepare the Cheese Sauce:
-
In a large saucepan over medium heat, melt the butter.
-
Add the flour, stirring continuously to form a smooth roux. Cook for 2-3 minutes to eliminate the raw flour taste.
-
Gradually whisk in the milk, ensuring the mixture remains smooth. Continue to cook, stirring frequently, until the sauce thickens.
-
Reduce the heat to low and add the grated cheddar, Gruyère, Parmesan, and Comté cheeses. Stir until fully melted and smooth.
-
Season with salt and freshly ground black pepper to taste.
3. Incorporate Truffle Flavors:
-
Stir in 2 tablespoons of Truffle Hunter Black Truffle Oil into the cheese sauce.
-
For an extra layer of truffle richness, add the finely grated Umbria Black Summer Truffle and Truffle Dust at this stage.
-
Mix in Tracklements Wholegrain Mustard for a hint of depth and spice.
4. Combine Pasta and Sauce:
Add the cooked pasta to the cheese and truffle sauce, ensuring each piece is well-coated.
5. Prepare the Topping:
-
In a small bowl, mix the breadcrumbs with 25g of grated Parmesan cheese.
-
Drizzle 1 tablespoon of Truffle Hunter Black Truffle Oil over the mixture and toss to combine evenly.
6. Assemble and Bake:
-
Preheat your oven to 180°C (350°F).
-
Transfer the truffle mac and cheese to a baking dish, spreading it out evenly.
-
Sprinkle the truffle-infused breadcrumb topping over the pasta.
-
Bake for 20-25 minutes, or until the top is golden brown and the sauce is bubbling.
7. Serve:
-
Allow the dish to cool for a few minutes before serving.
-
Garnish with a light drizzle of Truffle Hunter Black Truffle Oil or additional grated truffle, if desired.
Wine Pairing:
A perfect pairing for this dish would be the Long Bec Tournaine, Chenonceaux Sauvignon Blanc. The zesty freshness of this wine cuts through the richness of the cheese beautifully and provides a congruent paring to this warming comfort dish.
