Unlike chorizo or salami, Lomo is marinated and cured as one long piece rather than being chopped or sliced. This gives it its unique marbling and lean tenderness. Light in colour on the outside, the inside is a deep red.
Considered the finest cured pork product, Lomo is made using the tenderloin of pork.
A combination of smoked paprika, salt and garlic balances the intense flavour of the pork.
