Unlike chorizo or salami, Lomo is marinated and cured as one long piece rather than being chopped or sliced. This gives it its unique marbling and lean tenderness. Made by rubbing a pork tenderloin with paprika and then left to cure so that it develops a savoury, slightly smokey flavour.
