Recipe: Mediterranean Tagliolini with Vegan Nduja and Vegetables
Ingredients:

250g Tenuta Tagliolini

2 tbsp olive oil (use some from the Tenuta Marmorelle Sundried Tomatoes jar)

3 tbsp Belazu Vegan Nduja

1 jar Odysea Flame Roasted Red Peppers, sliced

100g Tenuta Marmorelle Sundried Tomatoes, chopped

2 tsp Mutti Tomato Concentrate

100g Tenuta Black Olives with Herbs, halved

2 cloves garlic, minced

1 small red onion, finely diced

1 tsp dried oregano

Fresh basil leaves for garnish

Salt and pepper to taste
Method:

Cook the Pasta: Bring a large pot of salted water to a boil and cook the Tenuta Tagliolini according to package instructions. Reserve 1 cup of pasta water before draining.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, sautéing until softened. Stir in the Belazu Vegan Nduja and cook for 2 minutes, allowing it to release its flavours.

Add Vegetables: Stir in the Odysea Flame Roasted Red Peppers, Tenuta Marmorelle Sundried Tomatoes, and Mutti Tomato Concentrate. Cook for another 3-4 minutes, adding a splash of pasta water if the sauce becomes too thick.
