Recipe: Mediterranean Giant Couscous Bowl with Harissa and Pomegranate Glaze

Ingredients:

  • 200g Giant Couscous

  • 2 tbsp Gee Gees Garlic and Chilli Oil

  • 1 tbsp Harissa Spice Blend

  • 2 tbsp Pomegranate Molasses

  • 100g Bernal Manzanilla Olives, sliced

  • 100g Pelagonia Stuffed Peppers, chopped

  • 2 tbsp Dukkah

  • 1 small cucumber, diced

  • 1 handful cherry tomatoes, halved

  • Fresh mint and parsley, chopped, for garnish

  • Salt and pepper to taste

Method:

  1. Cook the Couscous: Bring a pan of salted water to the boil, add the Giant Couscous, and cook according to package instructions. Drain and set aside.

  2. Prepare the Dressing: In a small bowl, whisk together the Gee Gees Garlic and Chilli Oil, Harissa Spice Blend, and Pomegranate Molasses. Adjust seasoning with salt and pepper to taste.
